A parsnip is like a carrot (sort of) and loads of people eat carrot cake and nobody thinks that's weird (mostly). So trust us on this one, it's NOT weird putting parsnip in a cake. (Okay, it might be a bit weird but it's delicious so who cares). Our Sweet Parsnip & Apple Cake also has a Marmalade Meringue Buttercream, which we want you to think about for a second.

Beth baked us a Sweet Parsnip & Apple Cake with Marmalade Meringue Buttercream for a birthday gathering on the weekend. The name tells it all – mouth-wateringly good – and everyone agreed it was delicious! So much so I was very tempted to pass it off as my own.
